Turkish delight

  • 25 g of Gelatine (powdered)
  • 250 ml of Water
  • 4 tablespoons of Rose water
  • 450 g of unrefined golden caster sugar
  • 4 tablespoons of Icing sugar
  • 1 tablespoon of Cornflour


Step 1

Grease a small backing pan (20x25 cm). In a saucepan mix the gelatine, water and rose water then mix the sugar. Heat genlty, mixing all the time until the gelatine and the sugar have completely melted. Stop mixing and bring to the boil, then reduce the heat and simmet for 25 minutes.

Step 2

Remove from the heat, and mix in the pink colouring then leave to cool for 5 minutes. Pour into the prepared pan and leave to set overnight.

Step 3

When set cut into cubes in the pan, thenmix the icing sugar and cornflour and toss the cubes in the mixture. The cubes can be save for later or wrapped in an airtight container.
