Easy Pear Muffins

  • 1 3/4 cups all purpose flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup skim milk
  • 2 tablespoons oil
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups chopped peeled pears


Step 1

Preheat oven to 400°F. Line 12 muffin cups with paper baking cups; spray paper cups with nonstick cooking spray. Lightly spoon flour into measuring cup and level off. Combine flour, sugar, baking powder and salt In medium bowl and mix well.

Step 2

Beat egg in a small bowl; mix milk, oil and vanilla by moving a spoon around in a circular motion until thoroughly mixed. Stir in pears. Add to dry ingredients; stir just until combined. Spoon batter into sprayed baking cups.

Step 3

Bake at 400°F. for 15 to 20 minutes or until muffins are golden brown and toothpick inserted in center comes out clean. Serve warm.
