- 1/4 cup of coconut flour
- 1/2 teaspoon of baking powder
- 1 pinch of salt
- 3 tablespoons of coconut oil
- 1 tablespoon of honey
- 3 eggs
- 1/3 cup of almond milk
- 1/8 teaspoon almond extract
- 1/2 teaspoon of vanilla extract
- 1 teaspoon of lemon zest
- Maple syrup
In a bowl whisk together coconut flour, baking powder, salt and put aside.
Cream together the 3 tablespoons of coconut oil and honey until mostly smooth.
Whisk the eggs in one at a time. Add the almond milk, almond extract, vanilla extract and lemon zest. Mix all ingredients until they're combined.
Heat about 1 tablespoon coconut oil in a large sauté.
Add batter (1 tablespoon makes one pancake) and cook for about 2-3 minutes on one side. The butter won't bubble, so be sure to check the underside and flip when golden brown. Cook for 1-2 minutes on the other side.
Serve with the maple syrup.
