Shortbread biscuits are the greatest British biscuits of all time. They are so easy to make and the result is so tasty! Great with a cuppa or served with ice cream.
- 300 g of butter
- 140 g + 4 tbsp of golden caster sugar
- 300 g of plain flour
- 140 g of rice flour
Leave the butter at room temperature; so remove it from the refrigerator to become softener. Place the butter and the sugar (140 g) in a mixer and blend until smooth. Mix the flours and a pinch of salt together in a bowl, and add the butter mixture. Mix well.
Using your hands, spread the mixture out in a baking tray. Cover with cling film. Place in the fridge, uncooked, for at least 30 mins and up to 2 days.
Heat oven to 180C/160C. Remove cling film, Mark the shortbread all over with a fork. Spinkle with 4 tablespoon of sugar, Bake for 20-25 mins.
Leave to cool in the tin, cut into 24 thin slices.
