- 110 g of butter
- 110 g of caster sugar
- 2 eggs
- 110 g of self-raising flour
- 1 teaspoon of vanilla extract
Preheat oven to 180 degrees C. In a large bowl, sift together the butter and sugar. Add the eggs, the vanilla extract and flour.
Pour into prepared pan with greaseproof paper in the bottom. Bake for 30 minutes in the preheated oven at 180 degrees C , or until a small knife inserted into the center of the cake comes out clean. Leave cake to cool. Sprinkle with icing sugar before slicing. You can even choose to fill the cake with chantilly cream or fruit jam.
