- 4 eggs
- 1-2/3 cups of sugar
- 1 cup of canola oil
- 15 ounces of solid-pack pumpkin
- 2 cups of all-purpose flour
- 2 teaspoons of ground cinnamon
- 2 teaspoons of baking powder
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 1/2 cup of semi-sweet chocolate chips
In a medium bowl, beat the eggs, sugar, oil and pumpkin with an electric mixer until well blended.
Sift together the flour, cinnamon, baking powder, baking soda, chocolate chips and salt. Add gradually in the pumpkin mixture and mix well until thoroughly combined.
Pour into an ungreased baking pan and bake at 350° for 25-30 minutes or until set. Cool completely.
