Marshmallow sandwhich cookies are a good idea for a child’s party. So much fun and so good to eat. The thing that children like even better than eating these cookies is watching the marshmallows puff up in the microwave. Fast and easy to make! Enjoy!!!

Ingredients

  • 1 cup of granulated sugar
  • ½ cup of all vegetable shortening
  • ½ cup of butter
  • 1 egg
  • 1 tsp of vanilla extract
  • 4 oz of semi-sweet chocolate
  • 2 cups of all purpose flour
  • ½ tsp of baking powder
  • 1 cup of chocolate chips
  • 24 marshmallows

Method

Step 1

Melt chocholate in a microwave and leave to soft the butter. Combine vegetable shortening, sugar and salt in processor until light. Beat in egg, vanilla, chocolate chips and melted chocolate. Add remaining dry ingredients until blended.

Step 2

Refrigerate dough and covered for 1 hour. Preheat oven to 350ºF.

Step 3

Divide dough into 4 pieces. On a well floured surface roll each piece to ¼ inch (5mm) thickness. Cut into shapes and place on prepared baking sheets. Gather up scraps and repeat with remaining dough.

Step 4

Bake in preheated oven for 8 to 10 minutes. Let sit on baking sheet 1 to 2 minutes. Leave to cool on wire racks.

Step 5

Place half the cookies, bottom side up on a baking sheet lined with parchment paper. Top with half a marshmallow. Bake in preheated oven for 2 minutes. Top with another cookie, top side up.
