Gluten free and slightly crispy on the outside and soft on the inside, the almond flour of these cookies is a healthier choice for your breakfast or afternoon break! You can’t wait to try these almond flour cookies!! Enjoy!

Ingredients

  • 1/2 cup of butter
  • 1/4 cup of coconut oil
  • 3/4 cup of brown sugar
  • 2 teaspoons of vanilla extract
  • 2 large eggs
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 3 cups of blanched almond flour
  • 1 1/4 cups of chocolate chips

Method

Step 1

Preheat oven to 350 degrees. Leave the butter at room temperature to be more soft. Then, in a large bowl use an electric mixer to cream together the butter, coconut oil, and brown sugar. Add the vanilla, eggs, baking soda and salt; mixing until incorporated.

Step 2

Add the almond flour, 1 cup at a time, mixing well after each addition until fluffy. Fold in the chocolate chips with a wooden spoon.

Step 3

Line a baking sheet with parchment paper. Form the dough into tablespoon rounds and place on the lined baking sheet.

Step 4

Bake for 11-13 minutes, or until golden brown around edges. Leave to cool before serving.
